Why an EPUB reads better than a PDF
A PDF keeps every line where it was on the printed page, so on a six-inch e-reader you zoom and scroll sideways through each page. An EPUB lets the text flow: you choose the font size and the reader fits the lines to the screen. That is what makes a long syllabus or a set of notes readable on a Kindle or a Kobo.
What goes into the book
The text is rebuilt in reading order. Sentences split across pages are joined, repeated headers, footers and page numbers are dropped, and pages in two, three or four columns are read column by column. Large headings become chapters, and the book gets a table of contents that any reader can open. Answers typed into form fields are kept beside their labels.
Limits
Pictures travel with the text and tables drawn with cell borders stay tables; tables without drawn lines become plain text. Scanned pages go through text recognition in the language of the page you are on, so open the tool in your document's language. The book takes its title from the PDF when it has a real one, otherwise from the file name. To edit the document rather than read it, convert with PDF to Word.

Does it keep images and tables?
Yes, in most documents. Pictures go in where they appear, and tables drawn with cell borders come out as real tables, merged cells included. Tables without drawn lines come out as text, and a logo repeated in the header or footer of every page is left out.

Yes. Amazon's Send to Kindle accepts EPUB files and converts them for the device.
Does it work with scanned PDFs?
Pages with no text layer go through text recognition in your browser. It works best on clean, straight scans; accented characters may need a quick review.
